Winemaking: Harvesting is carried out in boxes, by hand, where the moment of harvest is fundamental since it is done at its maximum aromatic potential. Pellicular maceration for 6 hours under an inert atmosphere with dry ice inside the press. Afterwards, the must is cleaned by temperature and stabulation (cold maceration with periodic movements to achieve the best contact with the fine lees), and then alcoholic fermentation begins at a controlled temperature of less than 12 °C for 15 days.
Malolactic fermentation is not carried out to ensure the permanence of its varietal aromas and it is not aged in oak. It is stabilized in stainless steel tanks to be bottled as soon as possible.
Tasting Notes: Pale yellow color with greenish hues. High aromatic intensity. Aromas of licchi, peach and passion fruit as well as white peach and roses. Very round, crisp with medium natural acidity. Persistent finish.
