As a passionate amateur war historian, our Father often likes to share his war knowledge. His passion stemmed from our forebears who fought for our country, a fact that has instilled in us a sense of pride. That sense of pride is also felt for our Father’s winemaking career. As a leader discovering the microclimate best suited to Barossan Cabernet Sauvignon, we felt there was no better name to represent our father.
Grapes: 100% Cabernet Sauvignon
Region: Sourced from our family’s Corryton Burge vineyard in the Eden Valley where the cool microclimate is ideal for growing premium Cabernet Sauvignon.
Vintage Summary: The 2021 vintage was outstanding in many ways. Excellent growing conditions and a mild summer led to perfect ripening across most varieties. These conditions allowed our red wines to have intense, rich and balanced flavours and colours. Overall a high-yielding vintage with high-quality fruit.
Maturation: This wine was matured in French Oak Hogsheads for 18 months.
Tasting Notes: Aromas of blackcurrants and blackberry with subtle notes of eucalypt leaf and cedar. The palate is rich and elegant with blackcurrent, coffee and dark chocolate. The oak is well intergrated into the wine, and the tannins are firm but are nicely balanced in the finish. Enjoy now or if your willpower is strong this can be cellared for up to 10 years.
Cellaring: Drinking best 10-15 years.
