Vinification Details: The bunches of our Malvasia Bianca del Chianti are picked up and hung one at a time on mobile racks in the vinsantaia. There they remained to dry out until the following February. Thanks to this system, it is possible to easily remove any damaged bunches. The must is then placed in small wooden barrels, known as caratelli, of 50 and 100 litres. These are made of diverse woods: cherry, oak, and mulberry. The wine is sealed into these kegs and ferments and ages for 6 years and one month – very slowly. 
Drying time: 4 Months on vertical racks. Bottle aging is 10 months.

Color: It offers a brilliant golden-yellow color tending to amber.
Aroma:  The aromas are intense and complex.
Palate: The remarkably persistent flavor is warm and mouth-filling with appealing notes of macaroons and toasted almonds.

Food Pairing: Excellent as a sipping wine or as a dessert beverage that accompanies dried baked goods, Vinsanto also pairs well with aged cheeses and certan goat cheeses.
