
Grapes: 100% Chardonnay
Region: Los Arboles district of the Uco Valley, Mendoza, Argentina.
Altitude: 1,300 meters above sea level.
Soil: Subsoils are made up of round rocks with a high contecnt of calcium carbonate – imparting stony minerality to the fruit. The area cool yet sunny days and cold mountain nights.
Vinification: Gentle whole cluster pressing followed by cold decantation at 6° C. Natural yeast fermentation, with gentle lees mixing, and max. temp. 20° C. Total fermentation time of 11 days. 90% malolactic fermentation.
Aging: 3 months in used French oak.
Tasting Notes: Bright white stone fruit flavors with a touch of tropical notes. Great natural acidity and a crisp, clean finish.
Food Pairing: Versatile at the table, this will match fish, poultry, salads, seafood, any creamy dishes.
